Quick, Easy, and Healthy Dinners

As we rush out of the house this morning or to our computers, we stop and think “what am I making for dinner tonight?” If you can’t name an item it’s time to really think, what do I have in my fridge or freezer that can make a healthy dinner. 

This morning, while I was getting ready for work and making breakfast I quickly realized that I had no plan for dinner. Take out for my family is not cost effective, as we are a family of 5 and everyone inevitably wants something different. Out the crockpot came and a meal of chicken taco bowls was made in 5 minutes. How is this possible you ask? All it took was 3 frozen chicken breasts,1 sliced pepper, a can of black beans and diced tomatoes some seasoning and an entire meal was made. All I have to do when I get home is put on a pot of rice and dinner is complete. 

Meal prep can be difficult. Making meals as quick and easy as you can after a long day at the office is key to success. Kitchen gadgets like crockpots and instapots can make planning (or rather not planned) meals a dinner success! 

One Pot Taco Chicken 

  • 3 chicken breasts, frozen or thawed 
  • 1 can black beans, drained
  • 1 can diced tomatoes 
  • 1 tsp adobo
  • 2 tbsp sofrito
  • 1 tsp cumin
  • 1 pepper sliced

Place all ingredients in a crockpot and set on high for 4 hours or low for 8 hours. Serve with rice and enjoy!
